Zibibbo Interger. Zibibbo is also known as Muscat of Alexandria (Moscato Bianco), one of the oldest known grape varieties in the world. It is often used for sparkling wines or as part of a blend. Marco de Bartoli has crafted this Zibibbo into a complex, aromatic dry white wine that is produced as naturally as possible.
No chemicals are used in the vineyard either for fertilization or weeding. Without chemical intervention yields are low and the clusters are harvested by hand in small cases limiting the time between picking and unpacking at the cellar. The grapes are pressed to start cold fermentation with natural yeasts and left for 24 hours. The juice is divided into two parts with 1/3 fermented on skins for 10 days in oak and the the rest for 10 months on lees with periodic stirring. No sulphides are added and there are no corrections. There is no refrigeration nor filtration. The wine is organic and suitable for vegans.
Leave to breathe once opened for best drinking. The finished wine is very textural with a dark yellow in colour and natural scents of honey.
