Ca de Noci in Reggio Emilia, close to Modena are a fully organic winery. Here they grow native grapes without irrigation, fertilser or chemicals of any kind. The wines are produced unfiltered and have no added sulphites. Everything is in careful synchronicity as is this Forte Vittorio vinegar.
It's produced from Lambrusco grapes that are first reduced to a must just like the beginnings of a batch of balsamic. They add no vinegar to the wooden casks letting it acidify naturally. Again just as you would for a good condimento (balsamic). This isn't aged to the degree that a balsamic would be. It has just long enough in the barrel to provide it with a destinctive flavour. It is acidic but has beautiful sweet notes and the basic flavour of it's Lambrusco heritage.
We highly recomend this vinegar. Don't just add it to dressings it is great in sauces and emulsions. It's sweet and sour kick will bring life to chicken and pork. A drop or two with olive oil and salt and pepper on sliced tomatoes is heaven.
