Honey in this family run business, is collected in a nomadic fashion following the bees from North to South Italy. This Firtree Honeydew Vinegar is based on honey collected from the flowering trees between July and August in Trento. The amber coloured honey has a resinous almost savoury flavour and is not very sweet, similar to Chestnut honey.Honey vinegar is made by first preparing a honey solution and adding yeast resulting in a sort of Honey Mead that is fermented before a vinegar starter is added.
Honey vinegar is obtained via the slow oxidation of mead in oak barrels. In this artisan process, the alcoholpercentage is slowly converted into acetic acid and the flavour and aroma are direct products of the honey used.
Andrea Paternoster, owner of Mieli Thun, monofloral honey is very passionate about his business and the bees from which he generates it. Honey, at the beginning or end of the flowering period is often
influenced by other nectars, Andrea only jars honey from the middle of this time creating true single origin honey.
