The Cavedoni family have made vinegar for 6 generatiions. Balsamic vinegar of Modena , follows an age old process, and one that is overseen by strict controls. The Indicazione Geografica Protetta, is a guarentee of origin for products produced in specific areas of Italy, and provided by a government body. If your balsamic does not have this approval it is probably not produced with generations of care in Italy.
The Sigillo Blu (blue label) is a refined blend with the complexity of age. The Balsamic Vinegar of Modena, made by the Cavedoni family are a natural dark, rich vinegar made from the essences of Trebbiano and Lambrusco grape “must”, then aged in Oak barrels. The reduced “ must” or cooked juice is blended with natural wine vinegar to produce a balanced sweet and sour flavour. This is achieved by blending the intense “must” with just the right amount of wine vinegar and storing in generations old, Oak barrels. The “must” for this vinegar is from the Emilia Romagna. Once blended it is stored in oak ready for the decanting, over time.
Blu is decanted 10 times. It is moved from barrel to barrel during decanting, this intensifies the remaining vinegar and gets rid of sediment. Full bodied and velvety with touches of caramel and a smooth oakey finish. The blu has an intensity that works well with sauces, dressings and sweetended for desserts and agro dolce dishes
