Oro Nero Sogno ( Black Gold Dream) is a traditionale balsamic made in Modena that has been decanted a minimum of 15 times. Traditionale Balsamic must meet stringent criteria in order to meet it's stamp of authenticity. It is made entirely of Trebbiano and Lambrusco grapes from the Modena area. This is reduced to a "must" then aged in barrels in a series of decreasing capacities and different woods, traditional balsamic vinegar of Modena spends it’s years thickening and intensifying in flavour. This happens entirly naturally using vinegar mother spores and evaporation. This particular condimento has been decanted a minimum of 15 times. Decanting happens when the vinegar is moved to a new and smaller barrel. The largest barrel is then emptied a little. The reducing liquid in the larger barrels is replenished with only balsamic of 12 years (decantings) and more. The Sogno is a thick syrupy liquid that is amber dark. It has the acidic bite of natural vinegar and the sweetness you would expect. It can be used in a sauce or dressing but is partcularly nice with fruit, desserts and cheese
