Oro Nero Imperatore ( Black Gold of the Emperor). Traditionale Balsamic is made with grapes from the area of Modena. The Trebbiano and Lambrusco grapes for this balsamic are grown on the family property, as they have been for 5 generations. The juice is reduced to a must and then put into barrels. The must ages in barrels in a series of decreasing capacities and different woods, traditional balsamic vinegar of Modena spends it’s years thickening and intensifying in flavour. The Extravecchio is aged up to 25 years and has had up to 30 decantings.
It is thick and dark. The sweet and sour is perfectly balanced.
