Grown in Puglia southern Italy, these tomatoes are certified fully organic. Paolo Petrilli is well know for his stance on organic naturally grown raw ingredients and this extends to his other love, wine making.
The tomatoes that grow at La Motticella are from San Marzano seeds. Paolo was one of a handful of farmers who saw the potential in buying these seeds and started to grow them. San Marzano tomatoes are only rarely grown commercially, their low yield making them less popular. During the industrial revolution they were replaced by higher yielding tomatoes. Each plant has a slightly different maturation cycle, making them more suitable to small farming. Although they look like the more common egg shaped tomato they are a little longer and fatter. They have a deep red colour and far less seeds than the usual “roma “ tomato. They have only 2 small sacks of seeds that are relatively dry, making them very popular for sauces and for bottling. The Petrilli production is completely organic and relies on natural rainfall . Paolo believes the minimal water usage is not only good for the environment but also to concentrate the flavours in his fruit. The minimal water usage also means that the crop is around 30% of the yield of other similar sized farms.
These tomatoes and the tiny Prunilli cherry tomatoes, also an heirloom variety, good for passata, are grown here in Lucere. All of the tomatoes are hand picked around August, when the fruit is fully ripe. They are blanched and peeled and potted on a production line, all by hand. The only thing added to the tomatoes is basil.
