Carnaroli rice is considered to be the ultimate risotto rice by many. There are of course regional preferences, but as a whole Carnaroli is a prized Super-Fino classified rice. Of all the rice varieties grown in Italy it is the most difficult to grow, and handle, accounting for its DOP control within Italy ( Govt protected). This rice has a very high starch content making it ideal for risotto as it produces a creamy finished dish. These grains are not easily overcooked staying separate and fluffy even once cooked. It can also be used to make rice salads, desserts and baked rice dishes
This medium-grained rice from Mantova, is traditionally used for making risotto, differing from the more common arborio rice due to its higher starch content and firmer texture, as well as having a longer grain. It keeps its shape better than other forms of rice during the slow cooking required for making risotto.
