The Lupatelli family created their company Morello Austera in the Marche region of Italy. After discovering that Amarena di Cantiano cherries were disappearing, they wanted to re-introduce this fruit. Cherries, along with a variety of other fruits, are now grown all over their six hectares of land.
They were a wild cherry growning well in limestoney soil on the slopes and hills. Because of their hardy nature they were perfect for cultivation. They are sour with a lovely texture and well concentrated in sweet sour flavour. Fruit harvesting is done in the last two weeks of June, and must be completed within five days of ripening and is usualy done in the cool hours and into the night. This is to keep the concentrated character and integrity of the fruit . The syrup is sweet with sour notes from the cherries and is good with desserts, cheeses and game meats.
The cherries are washed in bunches and dried before the seeds are removed and they are hung to drain. the juice is used in the syrup in which the cherries are cooked briefly before being potted and matured for two weeks minimum
