Puglia stretches down the the long pennisula to the south of Italy and is often referred to as, the heel of the boot . It is steeped in agricultural history and remarkably here in this region, more olive oil is produced than in any other single region of Italy. The highly respected Saverio and Grazia De Carlo’s family have been producing oils and potting vegetables here since the late 16th century. The farm is in the village of Bitritto in the famous olive growing area, around 5 km from the Adriatic coast and the city of Bari.
Along with their award wining oils they produce this stunning sun dried tomato pate. Use it straight from the jar or add to pasta, baked goods such as bread and tarts. Eat it with cheese, charcuterie and BBQed meats like chicken and fish. It can be added to a dressing or spread onto toast.
