These Pistachios known as "Bronte Pistachios" because they are grown and harvested every second year in the small town of Bronte on the slopes and foothills of Mt Etna in central Sicily. The populaion of 20,000 residents are predominatly a farming community. The harvest is conducted almost entirely by hand , due to the difficult terrain. Before grinding they are an intensly green to yellow elongated shape nut that looks distinctly different to the Mediterranean Pistachio. In fact this is the only region in Italy where Pistchios are grown
The nuts are processed into a paste by Pariani . A company that specialises in pressing rare nuts and seeds. They have developed cutting edge technology to extract oils, roast nuts and make pastes and flours. This paste is pure Pistachios without any additives. Many Pistachio pastes contain colourings and a percentage of almond meal. The flavour and taste of this paste is different to any other
