This little pot of Sicilian gold is made with the essence of IGT Zibibbo. This producer manages to keep the distilled character of passito in a light jelly that is not noticably sweet. Use it to pare with blue cheese, pates charcuterie and even foigras if you are lucky enough to have any. A little canape with roast duck and Le Tamerici Passito jelly would also be stunning.
Le Tamerici is a small company specializing in local, seasonal and even organic products made into traditional but very modern preserves. Each product overseen by Paola Calciolari is made in the fruit or vegetables peak season, with a light hand. The texture and essence of the products are what has made her a very important producer in Mantova in Lombardy.
