Amedei Dark Chocolate Squares

Ingredients: 80 g plain flour, 1/2 teaspoon of baking powder, 175 g Amedei Toscano black 63%, 375 g butter, 300 g sugar, 5 eggs, 1/4 vanilla pod, pinch of salt


  1. Pre-heat the oven to 170°C
  2. Sieve the flour with the baking powder and salt
  3. Melt the chocolate with the butter in a bain-marie
  4. Put the eggs and sugar together in a bowl, scrape out the seeds of the vanilla and add to the eggs
  5. Using an electric mixer, whisk the eggs, sugar and vanilla until light and fairly stiff
  6. Fold in the melted chocolate gently with a spatula and then fold in the sieved flour
  7. Pour the mixture into a 33x23 cm baking tray lined with greaseproof paper
  8. Place in the pre-heated oven and cook until firm to the touch (approx. 35-40 minutes)
  9. Allow to cool completely, cut into squares and serve
