Ingredients: 80 g plain flour, 1/2 teaspoon of baking powder, 175 g Amedei Toscano black 63%, 375 g butter, 300 g sugar, 5 eggs, 1/4 vanilla pod, pinch of salt
Method:
- Pre-heat the oven to 170°C
- Sieve the flour with the baking powder and salt
- Melt the chocolate with the butter in a bain-marie
- Put the eggs and sugar together in a bowl, scrape out the seeds of the vanilla and add to the eggs
- Using an electric mixer, whisk the eggs, sugar and vanilla until light and fairly stiff
- Fold in the melted chocolate gently with a spatula and then fold in the sieved flour
- Pour the mixture into a 33x23 cm baking tray lined with greaseproof paper
- Place in the pre-heated oven and cook until firm to the touch (approx. 35-40 minutes)
- Allow to cool completely, cut into squares and serve
